Yes you can.
About the amount of glass, I believe there are people here with more knowledge.
I'm gonna attempt similar, perhaps you could share some pics so we could visualize what you're doing?
Im no expert but I repaired a broken poly longboard a few months back. I used epoxy (I prefer to use it when I can).
I used 6oz bottom and 2X6oz on the top. All layers were diamond shaped and extended past the break about 8-10" at the rails - a little further at the stringer. The top layers were staggered - one was about 2" bigger than the other. I also made the rail laps larger than normal - thinking that it would improve strength.
This worked well - I have used the board hard for many sessions. Only issue is that I used an epoxy with no UV inhibitor and it is yellowing - I knew that it would but I didnt care since it was for my use.
Other more knowledgeable repair guys may have additional input that you may find helpfull. I learned a ton searching and reading throug this site -- the broken board repair thread was especially helpfull -- I think it was provided by Bill Barnfield
Hope thats some help - and best of luck.

Howzit yoyo,You have the glasscut perect with the diamond and when you stagger the glass put the smaller cuts on the top so you can feather the edges in. I can't count how many broken boards I fixed but glad I'm not doing them now. Aloha,Kokua
