As for carbon… the normal cutting, grinding or sanding of the any fiber, not just graphite, will generate small amounts of possibly respirable fibers. Wear a dusk mask and use good ventilation.

My basic understanding is that poly fumes into lungs are toxic, less absorbed by skin, and epoxy absorbed through skin is toxic, fumes less so. Others know much more.

Epoxy contains allergens, and you may become sensitized. Avoid skin/eye/mouth contact. Use vinyl or nitrile gloves. Wash exposed skin with soap and water. Some types require adequate ventilation - again - it is an allergen problem, and not a cumulative carcinogenic exposure problem. Epoxies are not carcinogens.

Carbon dust has its own class of respiratory illness. It is also not chemically reactive, dust accumulation is the potential problem, wear a dust mask if you are grinding/sanding it. The same precautions you use to avoid inhaling polyester resin and glass during sanding will generally be adequate against carbon dust - the potential health adverse effects are comparable.
