Why do the insides of the swallow have a curve to them? I’ve seen a few “modern” fish with straight lines from the two pins to the stringer butt-crack. It seems like it would be easier to just the cut the swallow straight, does this change the way a board rides?

the curve helps to ‘release’ the water off the outline. Those two inside curves are also a way to maintain end width and center depth between the two pins, while still allowing a bit of additional foam and surface area, i.e. one of the means to allow the necessary penetration, and enough lift for a quick release (as mjt stated), design elements which can often work against each other.
