Planing on making a 7.4x16x1" alaia from western red cedar, i was wondering if anyone had played around with putting fins on a board like this even just a couple of side bites to gain more control. Or does that go against the reason for making one in the first place??

but throw fins on why not? tradition? we dont progress from staying with tradition! do ANYthing you like!
asking for reasons to or not to should be a guide not instruction.
just know that it will still be a difficult surf, no matter.
there will be a finless future. its too much fun to fade away.

as for your build…its just a piece of wood dont listen to money makers on the importance of their design! kids all over the world get tubes standing on drift wood. saying that there are basic principals youd do well to figure
plaining area, tail/rail bite the main things im sure theres plenty on here to give you ideas on a design…
