how do you get the stringer flat

Is there some type of tool that I need to use to get the stringer flat when i shape?

Is there some type of tool that I need to use to get the stringer flat > when i shape? I grind my block plane blades into an arch, with the center being lower than the edges. In this manner, it cuts deeper on the stick and the edges lift out of the foam without scarring it. I grind Shrosbees blade like this for him and sharpen them once a week, at 35 + boards a week, he knocks off the edge quickly.
