I used to be able to turn on my 7’10 NSP to gain speed but after not surfing for 2 weeks, I’ve been having trouble turning. I weigh 125lbs if that helps. Everytime i try to turn i fall to the side.

try removing the fins , should make it much easier to turn .
One step back gives you the opportunity to take two steps forward... many times I took breaks, sometimes for months, and although it was a step back, the renewed enthusiasm combined with the previous experience meant it didn't take too long to surpass the old benchmark.

Try standing with your legs a little farther apart, with the back leg a little closer to the tailblock. It also helps to have wax on the rails where you push up from when standing up on the take-off. Please don't thank me, as it will bump up this thread.

Unless you have a tape showing how you are attempting to turn the board, nobody can give you a qualified solution. Sick Dog had some good advice you always need to start with a relaxed athletic stance feet spread, legs flexed knees. look at how boxers They stay cented and slightley on the balls of thier feet. Your upper body should be over the center of the board. Turns start with your feet and legs then move up, Use the upper body and arms for leverage and balance.

In my opinion, at first glance, your board is too big for your weight; I mean, if your a newbie, still you do not have the techniques to turn big boards in a dime; so it will be very difficult…go ahead and buy a smaller board (the outline will be better for turns) with plenty of volume
