Hmmmmm…Sand Dabs lightly dusted in flour & white pepper, pan fried in REAL butter. Drizzle white wine bernaise sauce and serve with Wisconsin wild rice and blanched asparagus. A Clos Du Bois 2004 Pinot Grigio goes nicely with it.

i dunno, some of the best i had were from roberto’s in OB, with a side of chips and guac.

or was it that place on west point loma next to 711, across from blockbusters and the chinese food place? hmm…tough choice.

best fish? the kind that don’t bite…unless your fishing. but then…ah forget it

My favorite is deep fried Ling Cod w/ rice,dicon,and dipping sauce.

…Red Vermillon would be my second choice.

what ever you can catch

saw a 35lb awa(milk fish) take my cousin for a death ride into our paipai net once as kid.

taught us how wrong it is to wrestle a fish is that doesn’t want to die just yet in an entanglement of net underwater.

my uncle had to grab the boy, fish and tangled net up out of the water and throw them in the inner tube to prevent him from drowning and more importantly not lose the fish.

fish in general…

a very large kumu steamed chinese style with hot oil, green onions and ginger and side order rice…

saw some world record carp this weekend on the news that took a guy for a ride in his boat…

Hundred years or so ago I worked at Senor’s Old World Resturaunt in Honolulu. Dishwasher. Made my own. Lobster tails chopped, piled in flour tortilla, lightly sprinkled w/ whateva’ cheese they had, rolled and toasted on the grill. That was weekends. Rest of the week I lived in a station wagon on North Shore and ate peanut butter dipped from the jar w/ a carrot.

For me…well, I am starting a new gig running a fish market on Thursday, so I get to choose between quite a few. Still-

Grilled, I kinda like marlin. In taste and texture, it’s about halfway between tuna and swordfish. Grilled over applewood, ideally… with mebbe a light, not over lemoned hollandaise.

Fried: yellowtail flounder or lemon sole, rolled in beaten egg, then flour with a little pepper and celery salt, pan fried in butter. Close second, haddock. Or squid rings and tentacles in a light batter with a smoky hot thai dipping sauce.

Baked- finnan haddie. In milk, butter, sliced potatoes in a layer underneath.

Raw- tuna, the little football shaped bluefins, very fresh caught ( i.e. still moving ) dipped in little soy, Demerara sugar, sesame oil and the juice pickled ginger comes in mixed together.

Chowder? Or soup? The humble cod, or its pal the pollock.

Breakfast? Smoked fish, either quickly broiled to heat with a little butter and lemon or ( new one I just ran across ) smoked salmon eggs benedict.

Never met a fish I wouldn’t eat…

the ride home on the Hyde car and the 30 stockton

the ode de pesca was most entertaining
