Anyone have suggestions on nose and tail rocker for a 6'0" mini simmons? Also whats the best way to measure the actual rocker of a board? This is my first attempt at shaping so any advice would be greatly appreciated.

Take what I say with a grain of salt, or perhaps a handful. I’ve only made 7 boards myself. Someone with more experience will likely chime in after me, with better advice.
Disclaimer out of the way, Probably 1.5"-2" in the tail and 3.5" in the front. What I do is determine where the rocker apex will be and mark it off on the bottom. Then I take a straight stick and lay it on the bottom of the board, making sure it is only touching where the rocker apex is. From there you can measure the distance from the nose to the stick, and likewise the tail to the stick.
If it measures 3.5" up front, 1.5" in the tail, and your stick is only touching the board where you intend for the rocker’s apex to be, you should be in good shape.
Also, If I were you, I would try and get those measurements determined before you trace your template. Trying to get these numbers right after cutting the planshape is a pain in the ass.
Thats sounds like too much tail rocker to me. Rather between zero and minimal.
I have a 6’4" mini simmons (or is that a midi?) with zero tail rocker and a concave and it breaks the speed limit even when turning.
