I am not sure what “Hex” weave is? Can you provide more data or photos?
Plain Weave is the configuration of the Yarns in the Fabric. Plain means, one over, one under going each way. Other weaves will be different because they will, for example, go one under, two over, etc. There are near endless combinations of weaves for fabrics. But not so many are used when weaving Fiberglass. Some weaves can soak up more resin. Some less. Some are more flexible when bending over contours, some are not. Some create a more flexible laminate, some less flexible.
E-Cloth, designates the chemical make up of the actual glass. The E stands for Electrical. Hope that helps.

The site says it’s E cloth. Commonly used in surfboard construction. It is not a bad price either, 50" width is wide enough for two boards (or sides) at whatever length you choose. ie 6 yards would let you do a single bottom, double deck 6’ board twice.

Looks like the normal stuff but it is hard to tell without a close up picture of the weave or the Hexcel Style numbers.
If it is wide enough you can split it up the middle, depending on how wide your board is and how thick it is. Both of those effect how much you have to leave hanging to get a sufficiently wide lap.
