I like level just in front of the fins, a little down-hill at the tail so the resin pools into the masking tape dam at the tail, without overflowing.
Most guys I know jack up the tail to do their post-glass box or FCS install, then hotcoat with board shifted a little noseside to get the bead in tail correct. Kinda depends on how far up you want the built-up edge to run.
