Works great. I have two longboards glassed this way. Personally I can tell much difference to poly except the wife doesnt complain about the smell as much.
More time to glass=better laps
epoxy=a little more $
epoxy= not quite as good to gloss..
epoxy= less fumes(though I personally like the smell of poly in the morning.)
Not much difference in performance as far as I can tell but my experience is with longboards. Might get better flex with a shortbard.
Epoxy is a little lighter.
Many, more seasoned swaylockians, will give you better answers than mine I am sure.

How much lighter are we talking?
Epoxy over pU makes for one hell of a tough surfboard. Much more durable and ding resistant.
I’ve done many this way. Only slightly lighter… maybe negligible. Somewhat stronger… and every bit counts in this category. True, it’s more expensive, but you use a lot less, so it’s a wash, really. Certainly more user friendly for the non-pro and a lot safer. Just keep the wet resin off your skin so you don’t become sensitized (bad rashes when you come in contact with it… a cumulative effect from repeated exposure to wet resin).
you can get em a bit lighter than catylysed poly, but i can get uvcure polys about the same as epoxys in weight and strength imo
