That could be really interesting.
Though as with all of the ‘green tech’, you have to probe a little deeper some times to see just how green it is. Carrots are a very green source of material (though there are a lot of hungry people who might rather eat them than ride them) , but what exactly is involved in the ‘special process’ to extract the fibres?
Not to dump all over it, but if you are concerned about being green, it is a valid concern.
It is good to see research being done on all sorts of vegetable based fibres and resins though. (foams too, I think)
