if i hot-coat the board (resin + liquid parafin) today ( top and bottom) can i only sand it in a week or two in the future?
Or do i need to sand it as fast as possible?

No problem waiting one week or more. It will still be “sandable”, if only a little harder.

I like to wait some days until sanding to make sure it fully cured.
Sand paper does not gum up and uncured resin is quite toxic
